Supply Management: Key Driver in Quality Assurance
Process
- Tour of Seaworld -
Speaker:
John Reilly,
Vice President of Culinary Operations
[see biography]
The
tour will consist of the Culinary Operations warehouse
including the loading dock, dry goods storage, produce
and protein refrigerators plus the main freezer. Dinner
will be served at the World of the Sea, which is adjacent
to the Tidepool exhibit.
At SeaWorld San Diego, Culinary Operations supports
the park’s overall mission of amazing and educating
the millions of guests we entertain each year. The
traditional theme park dining approach of merely attempting
to satisfy guests’ hunger with quick service
foods has been transformed into an approach that integrates
entertainment and animal interactions with dining.
As our dining opportunities have become more varied,
the role of the Supply Management Team has become
even more integral to our success. Supply Management’s
role in quality assurance has been of critical importance.
Key elements of their QA systems include:
Centralized and decentralized purchasing
- Vendor
qualifications and inspections
- Product
evaluation process
- Receiving
process
- Quality
alert and refusal process
- Vendor
reviews
- Guest
surveys and feedback
Dinner
guests will enter through the Main Gate that will
be used specifically for them and staffed by the Special
Events Operations Team. From that location,
they will be escorted down to the World of the Sea
Aquarium (Dinner Venue). Parking will be free
of charge after 4:00pm.
